The perfect hot summer evening meal. Spicy shrimp tacos. All the fixins (cabbage, cilantro, onion, avocado, cotija cheese, shrimp, and a homemade sauce):


Not a real good pic of the build, but it sure tasted good.



There never seems to be enough room in the shell for everything.

Beaded buffalo wings with homemade hot buffalo wing sauce.

Done in airfryer. Wings came out crispy, then tossed in the hot sauce.

Some good blue cheese dressing for dipping.

Don't know why this great thread has become somewhat dormant....

Anyhow here's one from last week:

-- One pot lentil rice. Really good! Used Autumn Harvest lentil blend (from Beancooker's company) and extra cumin and fresh ginger instead of any coriander (which I don't like the taste of or cilantro for that matter).

I keep forgetting sometimes to take pictures or post, so after dinner tonight I saw a thread update and pulled leftovers from tonight out of the fridge and took a picture.

Tonight was Hatch Chile Chicken and Cheese Enchiladas. Super yummy!!!!!

Not dinner but brunch... oh my Big Grin

Added a scallion and Roma tomato along with the requisite lemon, salt and pepper to the avocado mix. Topped with everything bagel seasoning.

Nothing fancy. Japanese A5 Wagyu Center Cut NY Strip done on my weber with a griddle top. Also had seasoned collard greens with brisket fat and garlic mashed potatoes.

I am ABSOLUTELY going to make this!! I normally put a fried egg on top but a poached egg makes so much sense!

It is a regular around here. ENJOY!

Oh and try rubbing a whole garlic clove on the freshly toasted bread. Brioche followed by focaccia are our favorites for this.


And as an aside, while I believe it has been discussed some time back, I use Poach Pods (bought a set back in 2010 and haven't looked back) to make my poached eggs. In a pot with simmering water, one minute uncovered followed by 5 minutes covered. Perfection with solid set whites and lovely running yokes.

Okay here was my try. I just did it pretty simple and I had to poach directly in hot water. Egg had the perfect runny yoke. Next time I will try some of the other things you suggested. I really liked it.

I used to do the vortex hot water poaching method but was never consistent enough with my results to be happy. From your picture ya done good! Big Grin
