Made another Mediterranean meal today. Skillet Chicken with Orzo and Tomatoes. It came out amazing!!! First marinated skin on bone in chicken thighs for an hour and then cooked them part way in cast iron skillet. Then sautéed red onion, garlic, and tomatoes. Added chicken back in, cooked it for 15 minutes, and then put under broiler. Ciabatta bread. Final product! NRA Benefactor Life Member | |||

In the ultimate fusion dinner, my wife has some marinating spare ribs, ginger, onion, soy sauce, brown sugar, etc. Etc includes a little 고추장 gochujang! Going along with grilled chicken, rice, and beans. She’ll throw some homemade tortillas and avocado on for good measure if I had to guess. She spent her first 15 years in Honduras so she’s 100% a rice, beans, tortilla woman. But since I’ve introduced her to Korean cuisine it’s quickly become her favorite. I’ll post photos of the finished product. Nine years to retirement! Just waiting! | |||

The spare ribs turned out exceptional. The kids ate a majority of beans and rice accompanied with real unpasteurized queso and homemade tortillas made by Abu. Ignore the nails and plastic bowl, this was my 6 year old’s plate. She also made marinated chicken to eat with simple pickled onions and the tortillas. Nine years to retirement! Just waiting! | |||

Mmmm borscht. I only have it once a year on Christmas Eve but I look forward to it all year. Tonight was spaghetti. Simple, quick, and good meal. Sauce turned out wonderful. It's always good, but always a little different. Tonight I added some thinly sliced shrooms. Served over buttered capellini with some fresssshhhly grated 48 month parm/reg and some garlic bread ciabatta that I made this afternoon. I'm stuffed. ________________________________________________________ It is long past time for a Convention of States. The Founding Fathers gave us this tool to fix an out of control government and we need to use it. | |||

Did another spatchcock chicken and this time did it in the oven. My grocery store used to sell them split like this and pre-seasoned, but stopped many months ago. Now doing it myself, I won’t cook a whole chicken any other way. I made sautéed spinach with onions and garlic as a side. It looks burned, but it was super juicy and delicious. Seasoned and pan fried halibut with penne pasta in a vodka cream sauce with bacon and mushrooms and steamed fresh green beans.
