Yeah it was good, but my normal fajitas are 100 times better and I am known for them. Thanks though!

Tonight I made my normal beef fajitas instead of that experiment I posted last time.

Fresh sliced veggies to sauté. I added some New Mexico Hatch chili peppers I bought last year, roasted, and then vacuum sealed and froze them.

Of course the guacamole is fresh made and I buy raw tortillas to cook fresh myself.



Veggies cooking.



American Waygu skirt steak seasoned and marinated in lime juice.



Veggies done and damn they taste so good!




Fajita meat done grilling on the BGE.




Assembled dinner!

Is it something you can keep outside in a covered area? I have never looked into something like this.

Yes, and I'm sure many people keep theirs outside with only a canvas cover. I got this one because the grease trap was in the front. Charbroiler from Menards, bought for under $300 in 2021. Blackstones are a very popular brand too.

I was thinking the same thing. There are a ton of them for sale on Facebook Marketplace and Craigslist around me. Seems like people buy them, but don't want to move them, so they sell pretty cheap in some cases. I would definitely look there before springing for new.

Today was fried Texas Gulf shrimp, homemade coleslaw, and homemade French fries.

Following the proper steps makes the absolute perfect fries; soft and fluffy on the inside and crisp on the outside. For the fries I cut them all to size from a russet potato and soak and rinse them several times to remove the starch. Then bring to a boil and simmer 2-3 minutes. Remove them and dry them off. Then fry in batches at 350 degrees for 2 minutes each batch. Then fry again at 400 degrees for 5 minutes each batch. Each time I take them out from one step they sit for a bit while I do other stuff.




As I do things such as the shrimp and fries in small batches, I keep what has been cooked warm on a tray in the oven at 200 degrees.

Try frying them fries in beef tallow next time. It'll take them up to another level. Looks good as is though!
