Man that looks good! What cheese do you use? As my wife and I call it, I either choose to make “shitty movie theater nachos” or gourmet nachos. Either way I still do both in the microwave. HA!!!! I normally never eat the jail food, but I was at a county jail the other week and could not take a break for lunch so they brought me a tray of the prisoner’s food. Part of the law in Texas is that as an investigator if you are going to eat something in front of a prisoner, it has to be the exact same food they get. Chili-Mac is exactly what it was but it was nothing like your picture or recipe, but I was starving so I ate it. NRA Benefactor Life Member | |||

I used Sargento shredded, 1/2 cup sharp cheddar and 1/2 cup Mexican blend on reduced salt Tostitos baked for 6 minutes at 350. The ground chuck is browned along with a yellow onion, 1/2 red bell pepper, and a jalapeno all diced, then I add a can of rinsed black beans. The spice is just some taco seasoning that I make, 1/2 goes in with the meat the other 1/2 in the sauce which is essentially sour cream thinned with a tablespoon of milk. Topped it all with diced tomatoes and chopped cilantro. No car is as much fun to drive, as any motorcycle is to ride. | |||

Made some smoked ham and cheddar baked pastry things. Might need to tweak the cheese, and pastry shells are definitely a “learning curve”, but hey. It’s smoked ham and cheese, it’s not like it could really be bad, right? And accompanied by a nice Old Fashioned with Black Walnut bitters and Cedar syrup. I’m OK with it! Bill R | |||

Tonight I made Caldo de Res, which is Mexican beef soup. This picture was after the beef simmered for over an hour and I just added most of the vegetables; I add the cabbage in the last 15 minutes. I forgot to take a final picture to see the meat and all ingredients. I decided to make soup because we are finally having a cold night in my area. This has been a weird “Winter”. The soup came out so good. I seem to somehow make it better each time I make it and it is better than any restaurant version I have ever had. NRA Benefactor Life Member | |||

We wolfed it down before I got to take pics, but this Asian ground beef and pepper saute recipe is a keeper. Easy to make, easy to clean up after. Politicians seem to have forgotten that they work for us, not the other way around. — — — — — — — — — — — — God bless America. | |||
