This afternoon I smoked a side of salmon (six hours, pecan chips), glazed with a maple syrup / lemon pepper combination.

On the grill went a #12 cast iron skillet loaded with red, green, and orange bell peppers, small red potatoes, onion, and garlic.

Rubbing my belly and quoting my friend WP: “I’m in my happy place.” Big Grin

Chicken fried elk steak (in lard*) with a side of spuds and smothered in a bacon grease pan gravy. If that don't stick to your ribs, nothing will. And yes, all cast iron cooking, like this meal was meant to be. Wink



* Scored at the butcher the other day. Went to pick up some pig fat for sausages and he told me that he had a bunch of kidney fat. 15lbs for $2. I'll be swimming in lard for a year or two...and dang near free. Big Grin

Today I am working on making turkey soup from Christmas turkey. I won’t bore with a final picture as I posted it at Thanksgiving. This is the first step of boiling the carcass to get all the meat off the bones and create an amazing broth with all the spices, vegetables, and herbs that were in the turkey when it was cooked. I will strain it into a clear broth to then make the soup. It is amazing how much meat you get off the turkey that you didn’t know about when you do this.

No pics, but I bought a prime grade picanha roast and cut into 1.75" thick steaks. I sous vide'd at 131F for 2 hours, and then seared 1-min each side in a screaing hot pan. I had been watching some Brazilian guys on YouTube who were in love with sous vide picanha steaks, and I can see why they're fans.

Thicker fat cap than NY Strip, and just as flavorful and tender at only $8.99 per pound for prime grade.

Mrs. chbibc and I had a simple dinner last night. Actually more like a breakfast. Mettwurst from the last remaining German butcher shop in our city, eggs over easy and toast. Easy to cook and exactly what we wanted.

I fixed a large bowl of clam chowder with lots of chopped clams, dill, bacon crumbles, and butter. White pita bread to soak it up.

Mustard marinated pork, rice, and simple salad.

We stopped by the Italian market and got some snacks and dessert for after dinner.

I have always made exactly this every New Year’s Day for as long as I know. This has been a rough few months and I literally forgot about this meal this year.

Dinner was steak, asparagus, and mashed potatoes.

It is breakfast that I will show. I have tried several scratch homemade buttermilk biscuit recipes and none have been great until the one today. These came out amazing. Fluffy and moist on the inside and perfect on the outside. I made bacon and then gravy from the bacon grease to have biscuits and gravy, bacon, and eggs. Heaven!
