I did not take a picture but I fried some quail from a hunt on saturday, along with rice, gravy, and zucchini.

College son will be home for spring break and the only beef the dinning halls serve is overcooked hamburgers.

Keeping it simple with 7lbs of roast beef:



We’ll get stir fry and fajitas out of it besides the usual sandwiches.

Today was grilled beef and chicken fajitas. I normally just use a packet of Knorr Spanish Rice for the rice. My wife wanted true Mexican rice so I found a recipe and used it. At first glance it almost looks like fried rice, but isn’t and was very good. I will make the rice like this for now on. Of course made fresh guacamole and roasted some jalapeños for me as my mom can’t have any the spicy at all; otherwise, diced jalapeños would have been in the guacamole. I invited my mom over for lunch since I could go see her this weekend and she loves my fajitas. First time I have bought raw tortillas to cook and I will buy them this way for now on because they were so much better than just ready to eat tortillas I normally buy.

Looks great! I gotta get back to adding veggies to my meals. Hey, bread is bread! If it is something you have leftover, sure better to use it than to throw it away.

No problem Otto!! I absolutely love fajitas and should have taken progress photos. I am known for my fajitas. Also made fresh guacamole to go with it. I had my mom over today for the meal and she can’t have anything even remotely spicy and I LOVE very spicy food so that is why I roasted two jalapeños for myself, which isn’t spicy but it is something. Fajitas are a simple, but great meal. I think I will add cumin to the Mexican Rice next time as my wife said the rice was good but was missing something she couldn’t put her finger on. I will also add Serrano peppers to the rice while it cooks next time if my mom isn’t having it. I found it interesting the Mexican Rice recipe has you cook the rice in some oil until browned before adding any other ingredients.

My wife, being Latina, makes a mean rice.

She browns it slightly in oil before adding water, but all the veggies go in before the rice. A little onion and bell pepper. Of course she will add a yellow or orange Goya packet sometimes if she’s getting fancy. But a real authentic addition is havichuelas, which are a milder green pea in my experience.

I too love spicy food, if I every make it out that way in TX, we are having a BBQ with carne, rice, beans, and the spiciest sauce my wife can conjure.

I was in a hurry today and went with a well reviewed recipe, but this is where I like this kind of feedback and also like to research multiple recipes and kind of blend them into my own. This one had you brown the rice in oil first, then add hot water, some tomato sauce, vegetables of garlic, onion, carrots and peas. Then add in a tomato bullion. I saw the Goya brand at the store, but I love using the brand “Better Than Bullion” and used their Sofrito Base and some of their chicken base. You have me now to research more recipes! I love cooking. Thanks for feedback as to me it makes sense to at least do the garlic and onion with the rice before adding anything else.

Absolutely, like you, I like to experiment so to say. Tomato base is definitely a popular one in Latin cooking but my wife says not in Honduras. She frowned and shook her head lol. If you ever want any of our, read that as her, recipes please let me know.

You all really know how to do it right!

Sorry, no pictures, noting sexy, but good enough for a single guy on a Sunday...

One of those individually wrapped potatoes you just pop in the microwave for 8 minutes with some homemade chili from a family friend topped off with a little cheese and yogurt (No sour cream in the house, yogurt tastes about the same).

Well hopefully these images post correctly. I am now PAYING for Imageshack to host images.

So today I had a craving for Fish and Chips and wanted to make the fries from fresh potatoes. Everything came out as freaking amazing!!!!! I found a recipe, but used Louisiana packaged beer batter seasoning for the fish, but did follow the recipe for the fries. They had you first rinse them after cutting them into fries, then bring to boil in water and simmer 3 minutes, drain and dry, then fry for only 2 minutes, drain and dry, and then fry again at a hotter temperature for 8 minutes and damn were they the best fries! The fish also came out amazing. I used cod. This was better than I have had at any restaurant. I bought, but forgot to cut up lemons to go with it but did get malt vinegar and Dukes Tartar Sauce.

I am sorry that I like to do progress pics when I can as I feel it gives more perspective than just a final dish.
