(Hopefully the pic shows up this time)

Another breakfast for dinner, and this time completely homemade. Scrambled eggs from the girls, fresh made sausage, fresh whole wheat bread, my last jar of strawberry jam from last summer, and even homemade butter (scored some cream from a lady with a cow). Eggs garnished with fermented habanero mango hot sauce (can't remember who on here posted a pic of some that he'd made awhile back, but I've been itching to make some and finally did. Dang this stuff is gooood!)

I want to get back to eating a breakfast and that is a great breakfast! Perfect scrambled eggs to me. I remember growing up and staying the night at a friend’s house and his mom made scrambled eggs like a sloppy soup on the plate it was so undercooked. I felt bad, but I wouldn’t eat it and she wouldn’t cook them more for me.

As promised, here are my homemade tostadas with Mexican Rice. Fresh fried corn tortilla, refried beans, ground beef taco meat, Muenster cheese, and topped with fresh pico de gallo.

I make several Chinese dishes from scratch and my wife has been wanting Sesame Chicken so that is what I made today. It is a dish I had never made before. Came out really good!

For Easter supper it will be hickory smoked baby back pork ribs, with Cajun green beans with skinless baby white potatoes cooked with the green beans, along with bacon and sausage crumbles. Pecan pie for dessert.

Tonight was short ribs, mashed potatoes, and asparagus. I love the short ribs Instantpot recipe I use!

Beef Short Ribs:




Short ribs briefly browned on all sides before cooking:




Sautéed vegatbles in a wine sauce before adding ribs back in for cooking:

So much winning on this page.

Those short ribs look great - I usually make short ribs in sort of a korean style (kalbi gim).

I'll think I'll try western style braised short ribs. It looks great.

I wish I could cook mexican food. Looks very tasty.

Still looks good Jesse! Today I didn’t post because it was just baked chicken thighs with roasted brussel sprouts and I was in a hurry. Maybe I will post the leftovers version tomorrow with more added if my day isn’t crazy like today was.

I have no idea the name of this but it’s a soup made from a few veggies and cured beef from Honduras. It’s finished by adding a type of masa similar to fine grits.

It doesn’t look the most appetizing, but man is it tasty.

My wife sometimes doesn’t know the name of these dishes, “it’s just something we always cook in Honduras”






10 years to retirement! Just waiting!

Smoked a Ham for Easter on the Traeger, must have been good, only leftover was the bone...



Daughter has started making Sourdough bread, she does drops on weekends, this is the Easter Bunny Loaf, the orders hopped right out of the door!

Since the smoker was out and hot, popped on two pounds of Bacon!

Today’s meal was nothing fancy. My wife wanted hotdogs and chips for some reason. So I made us each two hotdogs. One with mustard, fresh shredded cheddar cheese, raw onions, and chili. The other with mustard, fresh shredded cheddar cheese, raw onions, and dill relish.

I put the ingredients on in the order listed, which is why you don’t see many of them. I like putting the cheese under the hotdog so the cheese melts.

Not what I wanted to make today, but it is what my wife wanted so that is what we had.
