Ribeyes on the park grill last night. It was too cold to finish them on the grill so I finished them in a cast iron pan. Made scrambled eggs with some left over home made bacon in that pan this morningSmile

Cabbage, carrots, potato and Kielbasa. Cooked up some bacon till crispy, browned smallish medium sweet onion, garlic, deglaze pot with 3/4 cup chicken broth, and 1/4 cup apple juice. Some pickling spices, salt, and red pepper flakes. Chopped cabbage, 1 celery stock cut thinly, sausage, potatoes, in Instant Pot for 5 minutes on high pressure 5 minutes release.

Underneath the veggies, there's about 4 pounds of [local beef] roast, some onion soup mix, and a batch of mushrooms.

Dinner's going to be late, but it'll be good.

I usually just make “normal” spaghetti, but today my wife wanted spaghetti and meatballs. I have only made it once ever before and used store bought meatballs.

Today I found two good recipes to make it from scratch and used a combination of both. My wife said she has tried meatballs and spaghetti at so many good restaurants and has never gotten what she expected it to be. She said what I made today was EXACTLY what she has been expecting and wanted and was so thrilled with the dish. I liked it as well as it turned out very good.

This was a starter of several fresh chopped herbs before I added an egg, water, cheese, breadcrumbs, and the meat. I used a 50/50 mix of lean ground beef and sweet Italian sausage. I used parmigiano reggiano cheese instead of Parmesan cheese. I had to fresh grade the cheese from a block as they didn’t sell it graded.

Heck yeah, looks good. I made chicken noodle soup the other day, but I have already posted it before. I roast a whole chicken, make the broth with the chicken carcass, and then make the soup. Takes about 5 hours, but is so damn good. I love soup, stew, or chili in the winter!

That's a great direction to go. Another direction may be something like fresh basil and mozzarella instead of pepperoni. Maybe lots of sauteed garlic (i don't know what it's called but when you take whole cloves and sauté them until they are spreadable).

Man, I want a meatball sandwich now.... You guys are killing me.

I am a little extra... I will broil bread to get light toasting add cheese, another 30 seconds under the broiler, add meatball then pepperoni, then back under the broiler. If I don't get the right level of crispiness on the pepperoni before bread starts to over-toast I'll finish the pepperoni with a torch.



Layer of provolone one both dides.
Meatballs on one side (I cut mine in half), pepperoni on the other half. Broil/torch until pepperoni curls and releases grease. Toss some Italian cheese blend on top and fold in half.

Ends up:

Top bread
Provolone
Pepperoni
Shredded Italian blend or mozzarella cheese
Meatballs
Provolone
Bottom bread.

PS do not tell your doctor about this.

Alright Jesse, I did what I could. I didn’t have the Italian cheese mix, so I put another layer of provolone on top. Came out good.

Oh it was and thank you both for the idea I didn’t think of. I should have included the four layers of protection that were in that room while eating it! LOL. I even had to kick my birds out and close the door to eat in peace.

Now I want a meat ball sub. Might have to make some spaghetti this weekend.

Tips for the edges of the sandwich. Use thin sliced provolone cheese, since there's three layers of cheese, you'll still get plenty of cheesey goodness. Drap the provolone over the edge of the bread a 1/4"+ that way it doesn't over crisp in the oven. Also towards the end of you've already achieved your preferred toasting level on the bread, but you still want to finish off getting the pepperoni cup/crisp/sweat or melt cheese use a kitchen torch.

Mrs. Sig Marine was in the mood for pizza so...made with a sourdough crust, homemade sauce, pepperoni, Italian sausage, onion, bell pepper and topped with mozzarella cheese
