Different Dinner last night, Cincinnati 4 way Chili ala Skyline style, yes it has beans, no I'm not apologizing to the TX folks for them! Only thing missing was fresh cut white onion.



Both are some of my favorites, the Cincinnati chili I've had never had beans or maybe it's been too long? I always remember it being almost the consistency of Taco Bell meat (but tastier) with a cinnamon/sweet/spicy flavor.

Chickens from my buddy's farm. Salt water brine for 4 hours, smoked with oak and apple. Kept a steady 275 on these birds for about 4 hours. Turned out great!

Made a soup/stew called Solyanka for the first time (loosely following this recipe: Solyanka; I've never tried it before so I don't know if I made it correctly but I probably should have used more pickles. I ended up putting bacon, sausage and sirloin beef into it, along with 3 different types of mushrooms. Garnished with a dab of sour-cream, dill and a few slices of fresh jalapeño for that added kick.

Cincinnati Chili isn't made with beans, they are added as requested, as in a 4-way or 5-way at Skyline. It does have a cinnamon flavor, the Chili is a meat sauce, over beans, spaghetti, onions, and cheese...

A 3 way has no beans included. for the dishes with them they are added to the dish, not cooked into the meat sauce.

One of the Lambrinides family (Skyline founders) lived in our subdivision, nice people, passed several years back...

Prime rib roast.

We put two cast iron pots on the grill -- one with baby carrots, honey, and butter, and another with "spudling" potatoes, garlic, and butter.

The Lovely Girlfriend made macaroni and cheese to go with it, and we opened up a nice Sangiovese to go with it.

That's all followed by a slice of Mom's rum cake and some vanilla ice cream.

In the words of my great friend WP: "Happy belly." Smile

I got up early (for me) and did my rub on a big, pretty 12 lbs. pork Boston Butt roast. Into the smoker by 8:30 A.M. with hickory wood and two pieces of charcoal. Temp probe in place and temp at 225F. It will take most of the day to reach 165-170F internal temp, and then a rest before supper. It will be joined with scalloped potatoes with grated Mexican 4 cheese, and bacon crumbles. Creamed spinach with blue cheese dressing and pita bread. For dessert, a piece of pecan pie!! That should get the job done.

Tomorrow I will process the remainder of the pork into small servings in vacuum sealed bags, and into the freezer for 2025!!

Merry Christmas everyone.

P.S. Likely to have a Christmas totty or two before supper.

Baby back ribs are currently on the smoker at 275 with oak lump and cherry chunks. Should be done in 30ish minutes.

Sweet n sour coleslaw chilling in the fridge

Zucchini slices with parmesan and pepper going in the oven in 7 minutes.

I packed up my Pit Barrel and smoked a Ribeye loin for our surf and turf Christmas dinner. Smoked with charcoal, hickory/cherry/mesquite chips. I pulled this at 122. The in-laws did the king crab and shrimp.

Slapped some 2x4's together to secure the PBC.
