So I am a hot sauce fiend. I love it on everything. I even put some Texas Pete Hotter sauce on vanilla ice cream once. I just can't get enough.

I divide hot sauces into two camps. The buffalo style and the cajun style. The buffalo style has more of a vinegary taste. Something I use on chicken mostly. The 'cajun' peppery style I use on everything else. I like a good warm heat but I also want a good taste. I love the "after burn". Eat a scrambled egg with hot sauce and wash it down with hot coffee. OMG so good! One of my favorites is Progresso Hearty Tomato with a liberal dash of Blair's After Death. Great on a cold dreary day. Tuna, burger, everything benefits from a good hot sauce.

So besides what I have in my meager collection (more in the fridge, just didn't make the picture) what else is a good tasting sauce? Something easily purchased at the local grocery. Although I am not against ordering if it is really good. Anyone use Duff's buffalo sauce? I usually use Franks Xtra Hot but I am always on the lookout for a good buffalo sauce. A bag of Ruffles potato chips and a bottle of good buffalo sauce makes a great movie snack (also good on popcorn). I found some Mrs Renfro's Ghost Pepper BBQ sauce the other day and man that is great on the grill!

Any recommendations for good fiery spices also. I'll buy some white fish (cod, tilapia) and heavily coat it with Tony Chachere's Bold Creole Seasoning, heat up the cast iron skillet super hot with a half dollar sized drop of olive oil, cook two minutes a side and wa la! Flakey spicy blackened fish.

Salad dressing? A tablespoon of Greek ranch style and a tablespoon of a good habanero sauce. Mix chicken in it's even better.

So my fellow hot sauce lovers, what do you use? And what do you use it on?

I'm always open to suggestions! Smile

I found Lucky's Hot Sauce at a Farmer's Market in St. Paul and have been hooked. Like you, I like a "hot sauce" that gives flavor, major heat isn't a concern. Any sauce can get that with enough of the hottest peppers. Not a huge fan of vinegar base sauces, at least not in a sauce that I like to put on everything.

Lucky's is made in MN which is how I found it at the farmer's market. Whole Foods is the only store I've been able to find it in and even that is hit and miss. When I find it I buy all they have.

By far the Cherry Bomb is my favorite but I also really like the Rudolph's Red Hot with Garlic. Truth be told, those are the only 2 I've tried though but will be getting some of the others next time I run across some

I like all the Louisana styles hot sauces.



I've been using this sauce (paste) for a time also. Made by the folks @ Siracha.

Blair's is the hottest I've tasted, the coffin box it comes in, very appropriate!!

Crystal Hot Sauce has a good flavor. Not really hot but tasty. I like it better than the others. Really shines on fried fish and fried chicken.

Another sauce you may like is Tiger Sauce. It's not a hot sauce per se, but tastes great in homemade soups, roasts etc.

I don't like my hot sauces to be firey hot anymore. I prefer them to have more flavor than heat, so I usually have a bottle of Texas Pete on the table. I use it on a variety of main dishes & snacks.

My wife thinks I'm weird, but I also prefer using Old Bay in place of salt & pepper, and salsa instead of catsup.

THIS!!! I order TryMe Tiger Sauce by the case, literally. Crystal is also a good Louisiana style.

Neither Tiger nor Crystal are super hot, but the flavor is just great on both!

One of the main genre's that you may be missing out on are the Habanero+mango+(sometimes) mustard-based sauces. Good ones in this category are Matouk's Calypso sauce, and Inner Beauty (although I'm not sure the stuff on the market now is the same as the classic recipe).

These go great on meat dishes, especially sausage.

Anything habanero based is good. I'm not a huge fan of Tobasco- too much vinegar.

I like the Sontava brand sauces. They are habanero based. I like a lot of the Carribean originated sauces.

Not a hot sauce but i like pureed jalapenos on just about anything. Tastes super fresh and spicy.
