UP in Hobbs Cafe ~~~ * GET IN * Cheese-Stuffed Chicken Milanese with Spinach, Artichoke and Onion salad in Creamy Lemon Dressing ... In this meal, scrumptious chicken breasts are stuffed with gooey mozzarella cheese and coated with crispy panko. Then baked. On the side, roasted artichokes and onions tossed with spinach and a lemony salad dressing ... tart and supremely satisfying. Best stuff on earth, that I've eaten today. Bon Appetit | |||

UP in Hobbs Cafe ~~~ * Bad boys whatcha gonna do * Chicken Paillard with Shallot Broccoli and Lemony Garlic-Tomato Sauce ... These bad boys are served up with garlic, tomatoes, and lemon juice. Served with some nicely roasted broccoli and shallots on the side. Sprinkled with fresh minced parsley, lemon zest and dusted with grated parmesan cheese. Bon Appetit ... could have at least shown the pounded and cast iron pan cooked chicken breasts a little better. Shoot The garlic and shallot take this zesty, lemony, cheesy chicken to a while 'nother level. Delicious !!! | |||

Try this recipe then. It's freaking awesome, one tweek, brown the brussels sprouts longer than what they show in the video and at a higher temp. Since they are baked with cheese they don't get the normal browning/charring on the edges you get when your bake/broil them. Also I put the brussels sprouts and onion/shallots in at the same time, not before brussels sprouts. Finally I add pepper and paprika. I also make a killer one with cauliflower, bacon, brussels sprouts, much easier, but the Gruyère mixed with bacon is the perfect combo. Pretty much it is my goal in life to take once healthy food and prepare it in a way that makes my doctor lose sleep at night. Jesse Sic Semper Tyrannis | |||

UP in Hobbs Cafe ~~~ * Pearl Necklace * Salisbury Steak with Snap Peas, Mashed Potatoes and Pearl Onion Sauce ... Salisbury steak hails from the late 19th century. Invented by a Civil War doctor, James Henry Salisbury, M.D. (look it up). He conceived of a meal he thought would offer all the nutrients the human body would need: meat, meat, and more meat. He thought vegetables were poison! (look it up). A delicious sauce drapes these perfectly seasoned patties. Roasted snap peas on the side would not have been in Dr. Salisbury's prescription, but they're a darn tasty addition. Bon Appetit | |||
