Today was chicken fajitas with Borracho beans.

Made fresh caramelized fajita vegetables with white onion, red onion, yellow onion, yellow bell pepper, red bell pepper, green bell pepper, and some hatch chile peppers I roasted and froze. I forgot to take a pic when they were done.









Perfectly seasoned and still juicy chicken breast BBQ on the BGE.





Final product with fresh made guacamole, fresh cooked tortillas, and fresh grated Muenster Cheese.

I made a double batch of Minorcan Clam Chowder!

Didn't have any fresh Datil pepper, just some Datil pepper sauce, I also used a fresh Fresno and Jalapeño pepper from the garden.

I used canned clams, not as good, but makes it easier, faster and cheaper, with almost the same results ( a little chewerier )

3 large carrots chopped
2 bell peppers chopped
3 stalks celery chopped
1 large sweet onion finally chopped
1 clove garlic minced
2 teaspoon rosemary
2 tsp oregano
2 tsp thyme
3 bay leaves
Tomato paste
28oz chopped or crushed tomatoes
1 or 2 red potatoes 2 cups chopped
8oz bacon or salt pork
64oz seafood stock
16 Oz clam juice
1 or more Datil pepper ( to taste ) Datil pepper is about as hot as Habanero but tastes better. I used 2.5 tablespoons of Datil pepper sauce 1 Fresno and 1 Jalapeño pepper ( chili peppers)
2 cans 6.5oz chopped clams
2 cans 6.5oz minced clams
Salt and pepper to taste.

Brown the bacon, when crisp remove
Add onions, carrots, bell pepper, celery to fat and when soft add the garlic, after you take the raw off the garlic add the tomato paste. Lightly brown, then add the chopped/crushed tomatoes salt,pepper, rosemary, thyme, bay leaves. Mix a minute or two then add the clam juice, from the bottle and the can if using ( fresh clams reserve the juice add now ) add the seafood stock, Datil pepper ( or sauce) and the bacon/salt pork.
Simmer for 20 minutes on low, or 5 minutes in Instant Pot.

Serve in bowl, some nice garlic bread is called for, and don't forget the Oyster crackers!

I love this stuff! Very spicy, and hardy. Yet light enough for hot days when you don't really want to eat. I know, but if you have had it you know, if not and like spicy give it a try, you can change the heat but using more or less chili.

I like Dat'l Do-It hot sauce the best, there are other Datil pepper sauce out there, but this is my favorite.

I fell in love with this in St. Augustine Florida years ago.

Clam chowder is one item of several that I have never had in my life, but will try before I die.

You would think I would have had it being the grandson of a lifelong fisherman in NY. He retired from being a fisherman his whole life on deep sea boats. I won’t forget not knowing how it would affect him on a visit when I was older and knew it was the last time I would probably see him. I took him to the movie “Perfect Storm” and he said it brought back a lot of horrible memories of seeing people die in addition to being in WWII. That was in July 2000 and also same time I took my wife to to see the twin towers for her first time.

After he retired he bought a boat and was a clammer in Long Island Bay. I used to go spend my summers there as a middle school aged kid and he taught me how to clam, fish, drive a boat, etc. I think one day when they made me eat a raw clam as a young kid is what then turned me off. If I had liked them, I could have had my fill of fresh caught clams everyday. I did eat them when my uncle would bake them with a little piece of bacon on each one. That just brought back a flood of so many wonderful memories.

Today was a healthy salad bigger than my stomach. I wanted to use up leftover chicken from the fajitas and other vegetables. Started with a base of spinach and arugula, tomatoes, figs from my tree, onions, egg, raw yellow squash, cucumbers, and avocado. Then added the chicken, garbanzo beans, blue cheese, croutons, bacon bits, ranch dressing, and ground pepper. It was a lot, but really good.

Some leftover bagel/lox/veggie cream cheese from family thing. Plus onion, lettuce, and tomato. Squirrels got all my tomatoes, except two sun gold.
