Jessie, that looks awesome! I have done several meals lately from burgers to fish, shrimp, and most with homemade fries but just didn’t post as they were things I have posted before.

On 4th of July I did do fried cod fillet and did homemade fries with sweet potatoes. The fries look burnt but they aren’t; it is just their color. They were great. I did the boil and two fry method. Still haven’t broken down to spend the money on beef tallow.

Leftovers. I had some "firecracker" smoked chicken wings.

Made with my "Super Secret " rub, but added to that is my secret blend of Satan's seasoning, a mixture of several hot chilies.

Smoked a bunch of wings on 4th of July and just finished off the last of them. Delicious!

Along with my nearly world famous red, with and blue potato salad, and Hawaii macaroni salad.

I'm 30mi West of DC. The lamb is just an ordinary rack from Costco, but I never have any complaints, except the amount of fat that needs to be trimmed.

Too damn hot to do anything outside today so I stayed in and made a 5# batch of brats.



I'll boil 'em in a little beer and finish up on the egg to get the snap. Garnish with ketchup, mustard, and some relish (yeah, I know, but that's how I like 'em).

Option two would be to decase a couple and make brat burgers instead. Eh...we'll see.

I really need to get back to having a garden. There is nothing better than a home grown tomato. I don’t care what type of tomato it is from the store, it will NEVER compare to the taste of a home grown tomato.

I dunno they can be pretty close because when tomatoes grown locally in gardens are ripe here they're also being sold in the local stores.

I hate the tomatoes at the supermarket now. Including the heirlooms.

We have a farmer at the local weekend farmer's market that grows several dozen different varieties of tomatoes. I especially like some of the Italian and German tomato varieties. I look forward to summers for them. The crop is supposed to start coming in next week..... The flavor and sweetness is truly amazing - makes me sad that I've gone my whole life until now not knowing how good tomatoes can really be.

My grocery store normally carries a pre-seasoned split full chicken. I always loved it because it was so easy to just throw on a Pampered Chef baking stone tray and cook. I guess I was one of the few buying them as they stopped selling it due to low sales. I like the whole chicken as I can get whatever parts I want instead of a package of only one cut.

I have bought a whole chicken twice before and roasted it in the oven on a rack and pan like a turkey. Today I decided to try cooking it in the oven in a cast iron skillet. I stuffed it with fresh herbs, used twine to truss the legs, coated in olive oil, added seasonings, and then figured I would add small potatoes.

It was almost a 6lb chicken so I cooked at 425 for 1.5 hours and covered with foil a little late when I saw the skin getting burnt. The chicken turned out amazing and juicy! I also steamed yellow squash and asparagus.

Next time I will check the chicken way earlier to cover with foil so it is more brown than black. It is just the skin and didn’t effect the chicken and I love crispy skin so I ate the black skin.

Blackened King Salmon on the griddle, baked potato and a garden salad entirely consisting of homegrown ingredients (lettuce, arugula, tomatoes, peppers, radishes, cucumbers).

I haven't done blackened salmon in a while; I must say it was great - even cooking it in the rain!

Absolutely nothing better than homegrown. I need to get my garden back to being a garden. Grass grew all over it.
