Yes sir. It’s pretty heavily smoked. The second pic, the brown line is the string it was hung on in the smoker.

I bought two items that were having black Friday sales: Yes, it did. I started the sous vide before the Big Ten championship, and only active cooking during the game was the sear and plating. I think this is awesome and will make some as a part of all the appetizers I make on New Year’s Eve! Thanks! I like the idea of then having marinara or ranch as a dipping sauce. NRA Benefactor Life Member

I finally made homemade Hot and Sour soup. It came out good, but the broth is not as dark as from a restaurant so I think I need to also add dark soy sauce and maybe a little more black vinegar. I want to try to nail the way it is from my local Chinese restaurant. I had never used wood ear mushrooms before and they really do look like ears…lol! NRA Benefactor Life Member

So just adding some dark soy sauce as well was the key! Now it looks and tastes just like from a restaurant!!! This was now perfect! NRA Benefactor Life Member

Honestly, while not sure how each tastes relatively, I think I prefer the lighter colored version. It's what I'm used to. But I'm both taste good. Have you tried Westlake Soup? If so inclined, I'm sure you could make it well given your experience w/ Hot Sour Soup (btw, it's always struck as a little odd why in english it's Hot and Sour but in chinese it's Sour Spicy (hot)). Hot being a little ambiguous. "Wrong does not cease to be wrong because the majority share in it." L.Tolstoy "A government is just a body of people, usually, notably, ungoverned." Shepherd Book

Last night for supper was a quicky but good one. I fixed beef chorizo over grits with sausage biscuits on the side. It filled my tummy well!

Also had a quick, easy meal last night - Bison burgers and tater tots. Tomato, onions and jalapenos on the burgers. Good comfort food. "If Gun Control worked, Chicago would look like Mayberry, not Thunderdome" - Cam Edwards

Many times you can substitute dried cranberries, “Crasins”, in recipes. Depending on the application, you can use them from the bag while other times you can cook them in orange juice to rehydrate them. I typically use them straight from the bag in bagels breads while rehydrating them for muffins. I would suggest trying each of the different methods (fresh, dried and rehydrated) to see which you prefer. ____________________________________________________________ Money may not buy happiness...but it will certainly buy a better brand of misery A man should acknowledge his losses just as gracefully as he celebrates his victories Remember, in politics it's not who you know...it's what you know about who you know

Dang, that looks perfectly cooked and mighty tasty. Did you apply some sort of mint or basil baste or marinade? "Wrong does not cease to be wrong because the majority share in it." L.Tolstoy "A government is just a body of people, usually, notably, ungoverned." Shepherd Book

If I was a normal person that might be a good guess, but I'm not. It's some random hot sauce I picked up at the international market while waiting for an oil change. Never seen it before, but it's yummy. I probably should have read the ingredients before the impulse buy, got a little food coloring in it for no reason. It's Guatemalan. Oh and MSG Jesse Sic Semper Tyrannis

Jesse, that looks amazing!! I failed to take pictures of Christmas dinner or dinner I made tonight. I was too busy cooking. My wife’s parents are staying with us and tonight I made crispy beef tacos with Mexican rice with everything from scratch. Her parents are from Mexico and my wife is first generation American. They said my tacos were the best they have ever had anywhere or even how they make themselves. That made me feel good and I had told them to be honest and critical so I can learn.
