Carrot cake closely followed as in almost a tie by Poor Man's Cake with icing. I found the recipe for Poor Man's Cake a couple of years ago and am now a true fan. According to the recipe "It’s a vintage cake recipe created during the Depression Era during the 1930s. The “poor man” refers to the ingredients; no butter, milk, nor eggs needed! Dang,, I forgot another fav I haven’t seen mentioned. A Cleveland version of a Cassata cake. A takeoff on a Sicilian Cassata cake. It’s heavenly good. Layers of white sponge cake, custard between layers, topped with whipped cream and lots of strawberries. | |||
