And for just a Bible to have, I highly recommend the CSV (Christian Standard Bible) version. Grew up as a NIV (New International Version) Bible person but our current church uses the CSV and I really like it.

Tell her to read the first 5 books of the New testament! they are the easiest to read and pretty self explaniory. Also join a bible study where there is discussion !!!!

I have a feeling Lee Strobel's The Case for Christ may be helpful. A number of C.S. Lewis' introductory books, like Mere Christianity, also mentioned above, are very good.

I like the NASB but I like it because it's the most "accurate" close to literal translation of the Bible in the original text. But because of that, it requires the highest grade reading comprehension ability. So it's not really easier to read.
