I thawed and sliced a couple beef coulottes. The heavy fat cap is left on to melt and self-baste the otherwise lean cut during the spin. They got skewered on the Weber rotisserie, and doused with olive oil, then heavily salted with coarse sea salt and coarse black pepper; this along with the melted fat form a heavenly crust. Spun for about 20 minutes over 100% hardwood briquettes, and cherry. Drenched in chopped garlic-butter slurry for the last coupla minutes. Roasted baby reds w/onions and steamed Brussels sprouts for supporting cast. This didn't suck! | ||

Salpicao is essentially Brazilian chicken salad. Here's what my wife puts in it: shredded carrots, shredded cabbage, corn, raisins, chopped ham, mayonnaise, chopped apples, shredded chicken breast. I top mine with shoestring fries. It's TO DIE FOR! She also makes "Mayonnaise" (MAY-O-NAY-SEE) which is a Brazilian mayonnaise salad that's similar to our potato salad. Feijoada is another good dish and probably the most popular. My wife makes that as well. And don't forget the kibi and the pao-do-queijo (Brazilian cheese bread). Wash it all down with a guarana. The pieces of meat are too clumped together. This former Brazilian recommends you to space them out evenly; the proper spacing should see each of the cutlets form a wide “C” on your skewer. | |||
