If I see a light turn red or I'm coming up to a stop sign, I'll shift into neutral and coast to a stop with brakes.
If I'm coming up on a turn or another situation where full stop is not required, I keep the clutch in, coast using brake as necessary, and downshift as speed drops to the appropriate gear - keeping the clutch in all the while.
I don't use the engine as a brake for everyday driving. Mountains and other like instances are a different story.
basically what I did the years I had a manual,

I will add, if I'm driving aggresivelly, e.g. taking a corner and coming out fast or something similar, I will down shift while keeping the clutch in. This keeps better control of the vehicle should something happen and I can come out of the corner faster as I'm already in the correct gear.
And this speaks to how different vehicles can also influence driving style. My Dodge 2500 G56 with its notchy rowing is going to be driven differently than a BMW's slick shifting short throws. I like them all.
