I have an open bag almond flour in the pantry so I've used it before, but cannot remember the context. Are these in any whole wheat flour? (part of the make up of any WWF) Or are they processed additives? Reason I ask, is the former Mrs. Monkey used to grind whole wheat (organic and pesticide free) into flour and make our own bread. That may be an option, or it may be of no help. I think they are, and they occur naturally. But overall Whole Wheat homemade ground bread is delicious and healthy in terms of nutrition compared to cheap white bread, I've had it and it's certainly delicious, but for my situation not advised for reasons unrelated to nutrition. You could try Einkorn whole wheat flour or something like an organic 9-grain flour. Maybe no worse than eating fruits and vegetables from farms outside of the USA with heavy metal contamination, human raw seweage used for fertilizer, traces of industrial waste and bad chemicals, etc. And esp. canned oysters grows on "oyster farms" in china. My nephew was having problems and I tried to help him w/ a 100% Spelt whole grain (organic) sour dough starter. The combination of spelt and the sourdough fermentation makes a big difference in digestibility. You can find other recipes using sourdough starter from cookies and pancakes and so on. The organic whole spelt flour we used was from Harvest Health Foods here in Michigan. | |||

Both of those are excellent reasons to avoid US wheat. I'm celiac and we (meaning the wife) bake regularly with non-wheat flours. King Arthur and Bob's Red Mill are brands which make excellent alternatives. Their pre-mixed products really do work well. e.g. pancake mix, cake mix, generic baking flour. You can try to make your own recipes, but the raw ingredients are expensive, and it is difficult to do as well as the products from those companies. Getting away from glyphosate can be tricky. Organic should cover it, but apparently it doesn't always. I just heard yesterday that California wines have glyphosate, even the organic wines. You need to read labels for everything. Especially look for certified gluten free and organic. There are apps for scanning bar codes in the grocery store to tell you if the product is celiac safe or not. If you are trying to be as strict as possible, restaurants are going to be challenging. There's tons of contamination. French fries, hamburger patties, blue cheese, scrambled eggs, etc. | |||

Scrambled egg mixes used by restaurants contain flour—my wife alerted me to that. But then I’m one of those who grinds his own wheat berries. Real hard to be on a low-carb diet when the bread you make yourself is so delicious—and aids with digestion (my wife has stopped using Miralax for her diverticulosis as she has eaten more of “Grandpa’s” bread. _________________________ “Remember, remember the fifth of November!" | |||

Gluten is in all wheat products as I understand. I buy organic whole oat groats and organic wheat berries that are certified glyphosate free. | |||

As do I. It really is remarkable, though, that we need to go to those lengths. Whoever thought it would be a good idea to spray wheat with Roundup prior to harvesting needs to be beaten about the head and neck with a sack of doorknobs. I really hope that Secretary Rollins (and RFK) go after these people and stop this process in farming. Almond flour bread 5 eggs 5 tbs olive oil 1 3/4 cup almond flour 1 tbs maple syrup 1 tsp apple cider vinegar 1/2 tsp baking soda 1/4 tsp salt Mix dry ingredients. Whisk wet ingredients together. Combine wet and dry until smooth batter. Pour into a greased or sprayed 8 x 4 loaf pan. Bake at 350 for 30 to 35 minutes. Silent | |||

So.... How does it taste compared to the taste of a nice loaf of home made break baked by your grandmother, for lack of a better description. Does it have a similar taste and body ? I didn’t save it and I don’t remember the exact particulars but I saw a YouTube video by two doctors that claimed plain white bread was better… or less harmful… for you than whole wheat. The complete opposite of what I have heard all my life… I don’t believe anything these so-called experts say anymore. Endeavor to persevere. | |||
