Shishito peppers were developed in Japan. Many of the YouTube videos show them being blistered in cast iron pans, but I wondered how the Japanese blistered them. I didn’t think that cast iron pans were a traditional Japanese utensil, despite the fact that I use a Japanese cast iron pan myself. I thought it was made for export to the American market.



I searched the web to find actual Japanese instructions for blistering these peppers. Here’s the only one I found that appears to be authentic:

And, by George, it DOES suggest use of a cast iron pan.

An interesting thing in the article: it says NO oil in the pan while the peppers are being blistered. Oil should be added later (so your seasoning will adhere), it says.
