Who Here Likes Shishito Peppers?
fried in a light tempura-style batter and drizzled with sweet/chili/garlic sauce is my fave. And yes some are hotter than others.

Shishito peppers were developed in Japan. Many of the YouTube videos show them being blistered in cast iron pans, but I wondered how the Japanese blistered them. I didn’t think that cast iron pans were a traditional Japanese utensil, despite the fact that I use a Japanese cast iron pan myself. I thought it was made for export to the American market.



I searched the web to find actual Japanese instructions for blistering these peppers. Here’s the only one I found that appears to be authentic:

And, by George, it DOES suggest use of a cast iron pan.

An interesting thing in the article: it says NO oil in the pan while the peppers are being blistered. Oil should be added later (so your seasoning will adhere), it says.

Shi-shi-to has three syllables, and each one is pronounced as follows:

The wife hates anything spicey but I enjoy a bit of heat.
I especially like Hatch when available.
Also I have a couple Jalepeno plants of my own.

As per the OP I found a bag at Jungle Jims, a local grocer.
Watched utube how to blister and cook them, loved them, never found them at any store since.
Ordered a pack of seeds online, just got my first harvest. A little small but delicious.
About 20 but didn't have a hot one.
Thanks PASig, I'll plant them every year.
I still have a bunch of seeds, would they be good for next year?

If you're growing your own and their fresh from the farm, you can probably eat them raw too.

I really like raw shisito dipped in ssamjyang or kochujang (korean miso based pastes). It goes nicely with korean bbq kalbi/bulgogi or japanese buta kakuni (simmered pork belly) or even a steak. And a nice bowl of japanese short grain rice.
