R.L. Burnside. It’s Dave Stewart (Eurhythmics), you see in the recording, who went down to Mississippi to record him.
Burnside is Mississippi Hill Country Blues. You’ll find it’s quite different than Delta Blues.

This isn't really a classic blues, but it's the first song that popped into my mind when I read this OP.
The Allman Brothers were hugely influenced by the blues among other genres.
This song "feels" bluesy to me. And Gregg Allman's voice will always blow me away.

My oldest found them busking in Hongdae when she was in Seoul on study abroad. I find their first album… unpolished, but the spirit is there. I also thought the vocals had more of a blues feel in Korean than their English tracks.

One of many legendary recording sessions from Fame Studio in Muscle Shoals, Alabama. Boz Scaggs, Duane Allman, the Muscle Shoals Rhythm Section (AKA, the Swampers), and the Memphis Horns.
If you don’t feel like you have the time to listen to the whole song, at least go to about the 10 minute mark and listen to the outro; it’s hard to imagine a tighter, more impressive Blues recording.

I'm on a roll today, listening to a lot of music. Two more Brits. Snowy White is not well known in the US, but he's got a pretty impressive resumé. He was a life long friend and collaborator with Peter Green, played with Thin Lizzie, and backup guitar in Pink Floyd.
And the great Alvin Lee. Speaking of outtros..., this one is incredible.
