We watched a Christmas program on TV tonight that was by the "The Tabernacle Choir". When did they drop Mormon?

Probably when the Mormon church dropped the Mormon. They want to be called the Church of Jesus Christ of Latter Day Saints now.

And the Church of Jesus Christ of Latter Day Saints Tabernacle Choir doesn't really roll off the tongue.

I don't think that's going to go over to well with, oh, say, the Catholic Church. Or any other Christian churches.
