What, you don't think Chinese people can cook Japanese food?  Of the 20+ local Japanese restaurants, only 3 are run by Japanese. The largest Sushi place in town is run by Chinese folks...I can tell by the yelling in the kitchen As a practical matter it is much easier to run a Japaneses restaurant than a Chinese one...there are fewer expectations of the menu.
