Quick, quick! Its the last minute!

Please recommend a really good quality carving knife and/or carving set.

Thanks ever so much, in advance.

Shun is definitely really nice and what I splurged on for our Thanksgiving.

Take a look at the F. Dick line of knives. I have a pretty eclectic knife block and my favorite carving knife is from them. My wife was a cutlery buyer at one time and this was her premium line, had Wustolf and Gerber, too.

I have a nice set of Shuns, but to be honest, this cheapo Victorinox boning knife is the one I grab for carving birds.

Found a well worn long Victorinox blade in a pile of garbage/used baby diapers etc in a rental house I was cleaning that I took home: it's been amazing for carving roasts and ham for many years. It's super thin, has clearly seen many many sharenings, but still takes an edge quickly.

Have a Gerber Miming set for when it needs to look pretty.

Still use an 8-inch Old Hickory Slicer or 7-inch Butcher. I'm a sucker for carbon steel and can get the edges to shaving sharp on a ceramic sharpening rod and/or strop in seconds.

2nd or 3rd from the top depending on mood...

Not Cutco.

Yes, I "own" a set. My MIL bought them years ago as a gift for us and we have been stuck with them since.

Agreed. Hate their knives. Way overpriced and low quality steel. But their kitchen shears are excellent.
