Take a look at the F. Dick line of knives. I have a pretty eclectic knife block and my favorite carving knife is from them. My wife was a cutlery buyer at one time and this was her premium line, had Wustolf and Gerber, too.

Found a well worn long Victorinox blade in a pile of garbage/used baby diapers etc in a rental house I was cleaning that I took home: it's been amazing for carving roasts and ham for many years. It's super thin, has clearly seen many many sharenings, but still takes an edge quickly.
Have a Gerber Miming set for when it needs to look pretty.

Still use an 8-inch Old Hickory Slicer or 7-inch Butcher. I'm a sucker for carbon steel and can get the edges to shaving sharp on a ceramic sharpening rod and/or strop in seconds.
2nd or 3rd from the top depending on mood...
