First time smoking trout...
My first time smoking trout. We caught these a month ago. I brined them in salt, water, soy sauce, brown sugar, all-spice and ginger.

We ate three of them tonight. Since it was my first time, we didn't count on these being the main course. We finished these after dinner. My son was fired up! He's 10 and we caught these together.

I used apple wood on the Rec-Tec RT-700 at 225 for about an hour and a half.

Ive never had smoked trout, but it sounds like a fun evening! My wife and daughter were at a workout thing tonight, so the three boys and I took the boat out on one of our local lakes that we haven't really explored before. Its supposed to be full of huge muskie, so that possibility is always exciting. Fishing was kinda crap (I got one little 12" bass and my oldest caught a nice bluegill), but it was a fun evening nonetheless. Beautiful weather and fun checking out a new lake. We saw some blue herons, a kingfisher, turtles, and some folks had a very realistic concrete alligator statue on their seawall which the little boys got a big kick out of Big Grin.

No need for papers. I assume that is why the head is still on Wink

Looking good and very tasty.
I used to smoke blufish filets and striped bass steaks.
Brine fish.
Dried than sprinkled Montreal Steak Seasonin and habanero pepper powder.
Smoked in torpedo smoker using apple and cherry wood.
Keep heat low.
Great way to enjoy fresh fruits of the sea.

Old Rugged Cross: I use a Rec-Tec RT-700 pellet grill/smoker with applewood pellets. It held steady at 225 the whole time. It makes smoking stupid-easy.

I'm just trying something different. I might try some oven-baked trout with butter, herbs and lemon zest. I could always fillet and fry as well.

I'm trying to do more fishing in general. There's red-tail perch on the coast and you can catch them on the surf with a 15 fish limit per person, per day.

Yep.
Fancier than we used to do camping.
We just wrapped them in foil and put them over the campfire. It helps if you have a grate.

The result is: families under siege; war in the streets; unapologetic expropriation of property; the precipitous decline of the rule of law; the rapid rise of corruption; the loss of civility and the triumph of deceit. The result is a debased, debauched culture which finds moral depravity entertaining and virtue contemptible."

A friend smoked our trout in a Little Chief (?) electric smoker. We'd eat it as fast as he could smoke it.

It was a great way to enjoy the fish since it was easy and didn't involve filleting them.

We used to smoke a lot of Whiting back in New Jersey.
