Yesterday I cut up the turkey we bought so I could sous vide the breasts. Now I've got each leg one their own vac-bag, the wings in another, and the back/neck/other boney parts in 2 additional bags, all in the freezer.
I'll do turkey stock out of the back/neck/boney parts, probably, but looking for ideas on the rest. I'll pressure can the stock and put it on my shelf, as I've done before and do with chicken carcasses.
I could smoke/roast the legs, I know. Or even sous vide then finish them on the skillet, but just thought I'd ask for other ideas?

Turkey Thighs are also the Finest source of Turkey Dark meat because there is no sinew at all. Just take it off the bone, slice it up and you will have the finest Turkey Sandwich you'll ever have. BTW on sliced fresh baked sourdough bread with a touch of Duke's it's pure heaven.
I've stopped counting.
