Question Re Cooking With Cast Iron Login/Join

I have seen a number of recipes that include tomatoes or tomato sauce, and specify cooking in a cast iron skillet.

I was under the impression that tomatoes should not be cooked in a cast iron skillet due to acidity.

Not sure where I picked up that idea. Is it incorrect?

I always have to take extra care to maintain my cast iron seasoning

when/if tomatoes are involved. Usually I avoid that ingredient, but my pans are well seasoned
I rinse them right away, and apply another layer of cooking oil.

Sort of similar to what happens to your black powder
pistol if cleaning is delayed.

My wife cooks tomatoes in cast iron all the time.

We just clean it up right after diner.

Then I toss it on the stove wipe the pan down with a thin layer of olive or avocado oil and heat is until is just starts to smoke.

I have never had a problem.

I am guessing if you left it overnight or longer you may have to scrub and reseason the pan from scratch.

I think it was okay, with care, in my well seasoned cast iron. But I had to redo the seasoning in my carbon steel. Maybe it wasn’t as well seasoned to start with. But I’m sticking to stainless all clad for tomato (acidic like lemon butter sauce, vinegar, etc) stuff.

I certainly don’t intentionally abuse my cast iron pans, but let’s not forget that they are the rough and tumble, clean it with sand and throw it in your truck, blue collar workers of the cookware world. They made their name by being durable and hard wearing. Use them for whatever you want to. Clean them and don’t store them wet. If something bad happens, re-season and carry on.

^^^ Pretty much that.
You're not supposed to wipe them down w/ paper towel either as the fibers get embedded in the seasoning. I use paper towel anyway.
For all the ways I abuse my CI, it should be broke by now.
But, for best performance, have at it and observe the results.

Son, I say Son, hopefully you’ve eaten them fried by others. Nothing touches fried green tomatoes…
It’s time to fry some… :-)



And, I do cook with tomatoes in cast iron. Typically, chili in a Dutch oven.

^^^^^ I only eat ripe tomatoes. I don't like green ones. My mother used to make fried green tomatoes, but I think she used a stainless steel pan.

My wife cooks with tomatoes with Indian and Italian sauces all the times in our cast iron, never had an issue. We always wash them out and oil them back down after using.

I was born in Arizona and raised in Michigan. I moved to Texas 40 years ago. I have already posted that my mom (raised in Arkansas) did make fried green tomatoes, and that I don't like them.

One of my favorite cast iron dishes uses two cans of tomatoes. After dinner I wash it with Dawn liquid soap and a brush Red Face . Heat it up and wipe it down with a thin coat of oil. Tough stuff.

As a quick touchup instead of re-seasoning you can always apply a thin layer of oil or bacon grease and turn upside down on top of a stove burner and heat on medium until it slightly begins to smoke. Then remove from heat and wipe.

Im not sure but would probably use a sheet pan in the oven instead.
