...pancakes with bacon. I was going to grill up a couple of London broil, but MrsMatt said she wanted pancakes for dinner. I've got no problem with pancakes drowned in butter and syrup anytime of day. Same with bacon. Anyone else doing something different for the mothers in their lives?

My wife loves french toast, so much so that 3 of the last 4 Mother's Day dinners have been homemade french toast along with sausage links, fruit, and beverage of your choice.

Guess what I'm making on the outdoor griddle tonight?

No dinner, but mom's favorite sweet is carrot cake. I baked it at her house, so it would be as fresh as possible when she got the first slice.

Sautéed pork medallions with mixed apples & walnuts in a cinnamon sauce. Served with snow peas and mash potatoes with plenty o’ butter. Downed with a nice Chardonnay.

It's kind of by feel, but basically:

Heat olive oil til shimmering over medium high heat, add a coarsely chopped onion until edges are browning, then add 3-4 Tbsp mild curry powder mix (made my own knockoff of Penzey's Now Curry, since Bill Penzey is a douchebag). Stir/scrape pan vigorously, lightly browning the curry powder, about 90 seconds. Add 2 cups veggie stock, and deglaze the pan. Add a tiny can (3 oz?) tomato paste, and whisk in. Add a can or two of unsweetened coconut milk, and stir. Add pre-grilled, thinly sliced meat of choice. I went with rotisserie leg of lamb, since I had a few pounds in the freezer from Easter. Simmer over low 30-60 minutes, stirring occasionally. I added steamed cubes of sweet potatoes at the end, since 1) they get mushy if added to the pan, and 2) the curry and potatoes don't exchange flavor much during the simmer anyhow. Serve over basmati rice, and naan on the side.

I cooked a Roasted Chicken with corn, rolls, mashed potatoes and gravy.

Dinner was at 2:00 and my wife kicked her mother out of the souse shortly after.... yes, she loves her mother, just in small doses.
