Something that will be enjoyed by others of all ages.
Fairly easy to prepare.

What are your suggestions for these kinds of events

Platter of wings with assorted flavors, Wing Stop, Publix, all can do that, bags of tortilla chips and salsa and/or guacamole dip,

Check with the Host, sometimes plates, cups, plastic fork/knife kits, napkins, 2 litre sodas, bags of Ice

I have been to Indy but not Daytona. Check policies on bringing in your food and drink. Your choices sound fine.

I like to do stuffed Jalapenos.

Even if the jalapenos are mild, they taste great.
The longer you bake them, the more mild they get, which can be good if you get a hot variety
.

So if you can, make them, put them on foiled backing sheets, transport and bake them at the party.
Same effect as cookies coming out of the oven.

I killed a bunch of ducks last year and have been making egg rolls for finger food parties. They're easy, delicious, and different.
