My favorite low carb recipe is simple.

Buy 18oz. Prime rib eye steak.
Cook to perfection any way you like.
Eat.

Rinse.

Repeat.

I'm a big fan of riced cauliflower. Very versatile. You can buy it at grocery stores (and 3lb bags at Costco), but it is also easy to make at home (just blitz raw cauliflower in a food processor).

It can be a great substitute for rice and other grains. Can make pizza crust with it. There are a million different ways to use it.

Quick, easy, and tastes great.

Shred a head of cabbage, brown a pound of hamburger, and then combine the two in pan and cook until cabbage is translucent. Add red pepper flakes and garlic to taste. Drizzle with vinegar, eat.

A favorite low carb side is steamed asparagus with butter and parmesan cheese. Great with a good steak.

A couple of people mentioned cauliflower rice. I've actually used it to make ham fried rice and it turned out great.

My go-to's are any meat with any veggies or salad. Cauliflower rice used a bunch of ways, spaghetti squash instead of pasta.

I lost 77 pounds by portioning meals instead of carb cutting or any of the other exclusion diets. I eat whatever I want, I just don't eat more than 14oz per sitting (the 14oz is the largest meal of the day - others are smaller portions). I did, however, cut all fast food (minus the occasional trip to 5 Guys), sodas, and candies. Along with exercise (I run, walk, and hike) and drinking water instead of the sodas, the weight melted off.

The hardest part was in the first week or two getting my stomach to shrink and getting used to eating less. Now, if I eat more than 14oz for breakfast, lunch, or dinner I feel like I am going to burst!

The best part is that I eat whatever I want. No cutting carbs, starches, or whatever. I get to enjoy all of the foods I like to eat.

We shop at Trader Joes. I see there are 3 in Tennessee, maybe one near you? But, TJ has a boxed and frozen carrot peal package. I use these in place of pasta. Heat them up in the skillet, use a low salt pasta (half a jar per carrot package) with Broccoli, mushrooms, and whatever other veggies you like and pour it over the carrot peal. It sounds like a yucky veggie dish, especially for a meat and potato guy like me, but it is Delicious.

I don't think we will ever use pasta again. These carrots are delicious as a substitute.

If you avoid anything processed, you’re well on your way. I always keep walnuts and raw almonds around. Low in net carbs. High in good fats. Don’t go crazy, because there are still calorie considerations.

It’s tough to make suggestions, because everyone has different taste preferences.

I’ll just say that my supper is often Glory brand “Southern Style” collard greens. Lots of dietary fiber, antioxidants, and inflammation regulation. And tasty, especially after I add my own seasoning items. Plus a small bowl of blueberries. More dietary fiber and antioxidants.

Later in the evening, a glass of Silk brand soy milk. The “Unsweetened” variety – my favorite, and lowest in calories. Has protein and calcium.

The Keto diet has worked for me, but I am primarily a carnivore in any case.

Do you like pizza? Google ‘Keto Pizza Casserole’. Basically all the good stuff in pizza, but no crust.

My keto recipe repertoire is growing but mostly consists of simple foods using the insta-pot, cast iron skillet, and toaster oven. My go to is pre-cooking chicken thighs (on the bone) in the insta-pot for a few minutes and then finish in the oven with wing sauce (franks). I finish them at 300 for 30 minutes with mushrooms and onions or Brussels sprouts etc. Lately though I have been obsessed with fat bomb recipes.

My two favorites:

1.Cauliflower "fauxtatoes." Google that and you will have the best low carb
mashed potatoes ever.
2. Dinner: Soft tacos: Mission Low carb tortillas, beef with taco seasoning, sour cream, shredded cheddar.

Snacks: Almonds and macadamias (from Costco to keep the price down). Pork rinds.

Meats: lots of steak and salmon. Ribeye is my favorite too. Filet for rest of family.

Broccoli: boiled in chicken stock.

Lots of wings from various places, mild sauce on the side.

Fast food:
Chipotle bowls: pork, sour cream, mild and medium salsa, sour cream, lots of cheese. Very filling, low carb.
McDonald's & Wendy's: Any burger with no bun, add mayo. Baconator all day long.
Also Egg McMuffins, no muffin. I get two at a time.

Not a recipe but if you love bread like I do, see if you can pick up some of these. They're great for making sandwiches and other stuff that would normally need bread.




I use them to make steak and cheese wraps.

My wife makes the zucchini pasta, just runs it through the spiral-izer and then sautes it just a little before adding spaghetti sauce or alfredo or whatever you'd normally have with pasta. I didn't believe it would be any good, but I gotta say that I almost prefer it at this point to real pasta.

Probably my favorite is sausage stuffed peppers. I usually make enough for 4 or 5 days. Buy 3 or 4 different types of sausage, combine them, put most in green peppers then just make meatballs with the rest. Cook in crock pot all day to soften them up. I'll eat 2 with a can of green beans once a day. No breakfast, and a GNC protein drink, (170 calories, only a couple carbs) for lunch.

I love omelets for late breakfast/lunch. You can change up what you put inside them (leftovers can be reused) and they’ll hold you well until dinner. Easy to make too, especially if you buy the already cooked bacon bits.
