Buttermilk pancakes are awesome. When my son came back from Afghanistan, he said the first thing he wanted to eat was my buttermilk pancakes. This is a great video on how to make pancakes. I think I'll make some tonight. Thank you.

Been making this guys recipe for a while now. They are very good, better than most restaurants IMO. Wil have try this one next time, he's got the browning down solid.

I make my own cream cheese, which results in an abundance of whey. Whey is my base for a lot of things but is killer in pancake/waffle batter. Whey is a buttermilk substitute.
Having watched the Epicurious pancake video and cleaned the drool off my keyboard, I went looking for the Ultimate Belgian Waffle recipe. Found it on Joshua Weissman's website. Just ordered Belgian pearl sugar, a necessary ingredient. Can't wait to try it.

I've been watching Matt's videos the last six months and I really enjoy them, good insights into professional chefs and how they do their thing. I recently made his butternut squash enchilada sauce...spectacular!

I love the really thin German style pancakes. Make them with buttermilk, a good amount of eggs, some vanilla and maple syrup on top. A little chewy, and super delicious.

What is the point of it being whipped if it’s just going to melt anyway?

This turned out to be a timely thread. We had company visiting last week and we ended up with some leftover buttermilk. I thought it would be nice to make some real buttermilk pancakes but I didn't have a recipe. My wife and I tend to be lazy and just use the pre-made dry mix from Sam's Club.
I followed the recipe and technique from the second video. There were only two differences that I had. One was that, since I had it on hand, I used actual buttermilk instead of milk plus apple cider vinegar. The other was that, like the guy in the first video, I used melted butter in the wet ingredients instead of vegetable oil. All I can say is OMG! Those were the best pancakes I have ever made and possibly the best I've ever had. Like member xantom, I think they are better than most restaurants. Thanks to Para for starting this thread at just the right time and thanks to xantom for the Epicurious video. I now have a secret weapon for when we make breakfast for visiting friends and family.

I made a batch this morning and fried them up on the Blackstone with some homemade breakfast sausage, then slathered them in elderberry honey syrup. Whooooeeeee they's good!
Didn't have any buttermilk so I made my own with a cup of milk and 1 Tbs vinegar.
I've always been a Krusteaz or Bisquick pancake guy, but I'll be making these from here on out.

My mother loves them but man are they greasy, no surprise I know.
I love pancakes for b-fast or dinner or a snack or... What's not to love? It is funny/amazing the science that goes into them.
