Me too. I always add parsnips on the rare occasion I make beef stew.
My favorite parsnip preparation is parsnip chips in the deep fryer, though.
Slice them potato chip thin on the bias, chuck them in the deep fryer, drain and sprinkle with salt and pepper.
Excellent alternative or accompaniment to a french fry.
