I cooked some parsnips this evening

Pipe SmokerI cooked some parsnips this evening
I had a sudden craving for parsnips – couldn’t remember the last time that I’d had any. So I sliced some up and cooked them to tenderness in my stovetop pressure cooker. Then I mixed in garlic butter, some mild horseradish sauce, and salt & pepper. Dang tasty! Parsnips have a good, and unusual, flavor. I have enough parsnips left to do it again tomorrow, and I plan to do just that.

GustoferI've been doing a lot of Polish recipes lately and they are fairly common in Polish cuisine. Hadn't had them since I was a kid and I like 'em. In fact, I'll be planting some this year if winter ever ends.

SchmelbyHad to Google what a Parsnip is. I think I'll try them.
I don't remember seeing them at Krogers. Have to look up
some recipies.

bald1I like turnips. Especially with butter, salt and pepper, wrapped in foil and cooked on an outdoor grill. But I've never had parsnips.

PykerRoasted parsnips (in oil or meat drippings with a sprinkle of salt) are a part of every British Christmas turkey dinner.

I bought these at Whole Foods (on Nobel Dr, just west of I-5). But I’ve seen parsnips at both Ralph’s and Von’s. They’re a pretty common vegetable.
Parsnips are related to carrots, but they don’t taste anything like carrots. Nor anything else, either.

rangemasterI have a recipe somewhere for them oven roasted with honey. Very tasty.
I too most often use them in cooking stew.

triggertreatI like them sliced about 1/4 inch thick and slow fried in butter until tender and browned. Sprinkle with salt and enjoy. My Dad used to cook them this way and it is the only way I have ever had them.

steelcityfishanddiveI always throw parsnips in with my roasts along with carrots, potatoes, and onions. MY mom did when I was young and I just stayed with it.

Pipe SmokerBTW, for those unfamiliar with parsnips, look for younger (smaller) ones. Older ones may have an unpleasant fibrous core.

DJ_Bostonback when I was a chef, we hired someone with lots of years cooking, but not at the level we were cuisine wise. he had never seen them, and we told him they were albino carrots. he referred to them as that for the longest time.

They are amazing in homemade Matzo Ball soup too!
While I am not a fan of all the chopping the end result is amazing and cures all!
If it won't matter in 5 years don't give it more than 5 minutes.
