Cumin is my favorite. Followed by garlic and most of the hot peppers.
More than that though, I like a lot of ethnic blends. Curries, Garam Masala, Berbere etc.
I will not eat anything with Fennel in it.

Dried: Going with Thyme. Just a pain in the butt to work with fresh. Tarragon a close second. Herb: Garlic. I also like to use celery. The leafy portions get nice and sweet when sautéed or in soups. Baking: A fresh sticky stinky vanilla bean.

Cilantro has amazing flavor in a lot of things especially eggs and Mesican Food.

I like most all spices except garlic and onion powder. I get a chemical taste with these and it's very easy to overdo as they are very concentrated. We use fresh when possible.
After watching a bunch of Chef John's Youtube videos, I'm using more Cayenne then I used to.

Pappy's.
All you need in one container.
We buy it in our local Fred's in Eugene and bring to back here.
Last time we came back to UK the TSA guy in PDX asked what we had in our backpacks. I emptied out my usual travel companion [a stuffed vulture] and a one pound jar of Pappy's. He looked at it VERY suspiciously and demanded that I open it right there to check that it was what it said on the label. I noted that HE wouldn't touch it - I had to do the whole checking thing. It was a factory-sealed jar, BTW.
I opened it, while he cringed - yes, really - and stuck my finger in an licked it off.
Niiiiiiiiiiiiiiice.
Having seen that I didn't suddenly start eating my own hands, or pulling my eyes out, or run around nekkid eating people, he grudgingly allowed that it might well actually be Pappy's after all.
