What Is Your Favorite Spice And Herb? Login/Join

I was just eating a couscous salad with cucumber, tomato, onion and grilled chicken with a Greek yogurt dressing that I had put a good bit of cumin in that just made it perfect and got to thinking about my favorite herbs and spices.

Here are mine by 3 categories:

Dried/ground type spice: Cumin

Herb: Thyme (fresh!)

Dessert/Baking spice: Nutmeg

What are yours?

Spice: Salt, that counts as a spice right or, is that the trump card in the deck? black pepper then, got some exotic stuff from Africa, has a real nice bite, on my wallet and tongue.

Herb: Thyme all day, every day

Baking: I don't do much but...cinnimon I guess. I like vanilla in a lot of things though Wink

It completely depends on the recipe. No one favorite. I dislike most herbed breads. I dislike caraway seed. I cook lots of ethic food and use appropriate spice blends in those. Ethiopian berbere and spiced butter (niter kibbe) I love. cardamom, cinnamon, mace, allspice or other different varied in baked goods, depending on country of origin. Cumin is kind of global and used in lots of cuisines, from Mexican to Middle Eastern to Indian.

Old Bay........there are others???? Huh, learn something new every day. Smile

Seriously though I like Cumin, Tarragon, Parsley, Cayenne, Paprika. All of those and the Old Bay see a fair bit of use. Garlic but more often than not it’s real garlic not powdered.

Cumin is my favorite too.

In particular, I like McCormack ground roasted cumin powder. The roasting makes a big difference. I buy it in large quantities:

I can't pick a favorite, it is dependent on the recipe.

Black cardamom is necessary for a lot of Indian cooking, but totally out of place for German food, just as one example.

I love garlic, but who wants it in chocolate mousse?

A few favorite Spices, from many:

* finely ground Jalapeno powder
* whole Ecuadorian Talamaca peppercorns
* Jamaican Allspice

For herbs, I like a wide variety of Sativas, Indicas, and Hybrids.
