If/when I make them (been a while), I usually keep it pretty simple...bacon or sausage (prefer bacon), egg, cheese, and a little picante. "If you’re a leader, you lead the way. Not just on the easy ones; you take the tough ones too…” – MAJ Richard D. Winters (1918-2011), E Company, 2nd Battalion, 506th Parachute Infantry Regiment, 101st Airborne "Woe to those who call evil good, and good evil... Therefore, as tongues of fire lick up straw and as dry grass sinks down in the flames, so their roots will decay and their flowers blow away like dust; for they have rejected the law of the Lord Almighty and spurned the word of the Holy One of Israel." - Isaiah 5:20,24

Not really from Vienna |
At Magoo’s they offer scrambled eggs, refried beans, bacon/sausage/chorizo, cheese, potatoes, jalapeño, onion, and “chili macho” (salsa). I omit the jalapeño and onion but lots of the denizens of this region can handle them.

We used to have a food truck locally. They made a fantastic burrito! Start with lightly toasting a tortilla and melt shredded cheese on it. Dirty rice, black beans, scrambled eggs, sausage and bacon. Salsa, guacamole, and sour cream. If I make them at home, I try to make sure the main ingredient is STEAK! P226 9mm CT Springfield custom 1911 hardball Glock 21 Les Baer Special Tactical AR-15

Slightly toast the tortilla first, then add crumbled Jimmy Dean sausage, mozzarella cheese, scrambled eggs, and about three very small pieces of green bell pepper. "Ride to the sound of the big guns."

I kinda like crispy hash-browns in mine. Gotta have mild green pork chili to top it off... "Someday I hope to be half the man my bird-dog thinks I am." looking forward to 4 years of TRUMP!

New Mexico is the land of breakfast burritos. I do either: 1. Eggs 2. Crispy bacon 3. Hashbrowns or beans, depending on mood 4. Hot green chile 5. Cheese OR 1. Eggs 2. Hashbrowns 3. Carne adovada, which is red chile based ________________________________________ -- Fear is the mind-killer. Fear is the little-death that brings total obliteration. I will face my fear. Pretty sure I have never tried a breakfast burrito before, but I'm going to make one and see if it's worth it based on the enthusiasm here.

If you see me running try to keep up |
Mexican chorizo (which can be purchased locally at HEB) and eggs. Or refried beans (fresh made, not from a can) and bacon. Or potato and egg. Those are the traditional breakfast tacos my grandma would make. FYI she started off making the tortillas by hand every morning. Mexican food changes by the area in Mexico it's from as well as the area in the US it's from.

After living 16 years in New Mexico I can't eat a breakfast burrito without green chile. And for the record, Colorado green chile sucks. You guys can't even spell it right!
