If/when I make them (been a while), I usually keep it pretty simple...bacon or sausage (prefer bacon), egg, cheese, and a little picante.

At Magoo’s they offer scrambled eggs, refried beans, bacon/sausage/chorizo, cheese, potatoes, jalapeño, onion, and “chili macho” (salsa).

I omit the jalapeño and onion but lots of the denizens of this region can handle them.

I make breakfast tacos or burritos almost weekly. My go to ingredients:
  • 3 eggs
  • home made salsa from tomatoes and peppers grown in my garden
  • cheese (typically 4 cheese Mexican blend)
  • 4 oz Sliced beef & pork smoked sausage (peppery like a Texas BBQ sausage rather than a sweet breakfast sausage)
  • ghee
  • burrito sized flour tortilla

    Directions:
  • brown the sliced sausage on medium high
  • crack open 3 eggs
  • add 3 spoonfuls of salsa (i.e. 1 spoonful per egg) to eggs. This step that is different than most people's.
  • stir the egg and salsa mixture
  • flip the sausage
  • add ghee to skillet
  • add egg and salsa mixture to the sausage and keep stirring
  • when almost done sprinkle cheese over egg mixture
  • heat tortilla 15 sec on microwave
  • dump mixture on warm tortilla and fold it into burrito

    We used to have a food truck locally. They made a fantastic burrito! Start with lightly toasting a tortilla and melt shredded cheese on it. Dirty rice, black beans, scrambled eggs, sausage and bacon. Salsa, guacamole, and sour cream.

    If I make them at home, I try to make sure the main ingredient is STEAK!

    1. Eggs
    2. Crispy bacon
    3. Hashbrowns or beans, depending on mood
    4. Hot green chile
    5. Cheese

    OR

    1. Eggs
    2. Hashbrowns
    3. Carne adovada, which is red chile based

    Mexican chorizo (which can be purchased locally at HEB) and eggs. Or refried beans (fresh made, not from a can) and bacon. Or potato and egg. Those are the traditional breakfast tacos my grandma would make. FYI she started off making the tortillas by hand every morning. Mexican food changes by the area in Mexico it's from as well as the area in the US it's from.

    After living 16 years in New Mexico I can't eat a breakfast burrito without green chile. And for the record, Colorado green chile sucks. You guys can't even spell it right!

    Believe it or not WaWa has a great breakfast burrito, you can customize it, and it's not expensive.



    Eggs, Scrambled or Omelet style, you can put whatever you want in it, Sausage, Applewood Bacon, chicken, ham, beef, different cheeses, Fresh Salsa, peppers, seasoning, sour cream,
