I had a pretty dang yummy chicken salad sangwich for lunch but thoughtlessly ate it without taking a single picture. The chicken salad had bacon crumbled in it so you know it was awesome.

There’s this little hole in the wall Mexican restaurant near my work. You go into a Mexican grocery store, then walk to the back and almost go through a secret door to get to it, and it’s awesome.

Torta Al Pastor; Al Pastor pork, refried beans, mayo, lettuce, tomato, roasted Jalapeño, onions, Oaxaca cheese...DELICIOUS

Grilled cheese for lunch today. We’ve taken to using the frying pan, with a little mayo spread on the outside of the sandwich. Today’s were a bit darker, still finessing the heat after moving to a small cast iron pan.

There is a restaurant in Anchorage called Spenard Roadhouse that had a spin on the cuban sandwich. Instead of sliced pork, they used pulled pork. They also used a torta for the bread.


That and the BLT are my 2 favorite sandwiches.

Cast iron griddle on low. Sourdough slices with extra extra sharp real cheddar.
EV olive oil spray on first side cover with large lid. When golden spray top side flip & cover.
Remove when golden and let the cheese set for a few minutes. Yum.
