Grilled cheese for lunch today. We’ve taken to using the frying pan, with a little mayo spread on the outside of the sandwich. Today’s were a bit darker, still finessing the heat after moving to a small cast iron pan. -- I always prefer reality when I can figure out what it is. There is a restaurant in Anchorage called Spenard Roadhouse that had a spin on the cuban sandwich. Instead of sliced pork, they used pulled pork. They also used a torta for the bread.  That and the BLT are my 2 favorite sandwiches. Cast iron griddle on low. Sourdough slices with extra extra sharp real cheddar. EV olive oil spray on first side cover with large lid. When golden spray top side flip & cover. Remove when golden and let the cheese set for a few minutes. Yum. | |||
