I've been making bagels for awhile and they are better than anything I can buy. I've had NY bagels 50 years ago so it's hard for me to make a fair comparison but...I would put these up against them and they would probably rate very well.

I do boil mine for the reasons others have listed and if you like bagels that are a little crusty on the outside and chewy on the inside, the time is definitely worth the effort.
Plain, Everything, Jalapeno Cheese, Asiago Cheese, Cinnamon Raisin...they're all good

Impressive Marine!

NJ bagels are delicious just like the pizza. To me it rival NYC bagels. Its the water that makes the bagels taste good.
The best bagel in Clifton NJ was run by a bunch of punk rockers. They had great cinnamon raisin bagels but they were best when they were fresh out of the oven and the butter would melt into every nook and cranny.

I was always taught that home bakers can use a baking soda/water solution to boil bagels that will approximate the lye/water solution that commercial bakers use.

Would you care to share your recipe?

I've made them using Peter Reinhart's recipe. They did turn out good, but not 'better than anything I can buy'.
