Had a heck of a great hunting trip on my cousins ranch today I was solo since his wife is in the hospital. But I made up for it. I had 4 bucks in range..of course no buck tag. I was able to seal the deal about 11 am with this horned old lady speed goat. Then more bucks just walked by. It's like they know....

Let's see your results!

Looks great. My question is about the quality of Pronghorn as table fair? I’ve heard mixed reviews, did try it a time or 2.

I absolutely love pronghorn table fair. The back straps are phenomenal! Like anything, ya have to take care of it quickly in the heat.

Beautiful antelope country there, and a nice doe.

I shot a doe 'lope in CA when I was lucky enough to draw a tag.

Edibility. Here is my little story on that. Myself and 2 buddies all received tags the same year, so we went together. I filled my tag about 6:00 am opening day. One of my partners had talked to one of the wildlife biologists that manages the antelope population for CA Fish & Game. They told us the key to good meat is cleanliness and cool down. Antelope have a very strong musk in their coat that absolutely ruins meat that one has to either avoid, or use vinegar to neutralize. I field dressed the antelope, then hung it back at camp and spent a couple of hours picking off every hair, cutting off every bit of blood shot meat, and meticulously washing the entire thing with a vinegar water bath. Both my partners did the same thing. We dropped our animals off at the local butcher shop in the nearest town that does game processing. They told us it would be a couple of days before our animals would be cut and packaged. One of my buddies and I also had deer tags for the same area that year, so we stuck around and scouted deer. On the appointed morning we headed back to town to the butcher shop right when they opened. We came in and the lady behind the counter greeted us, and the conversation went almost exactly like this:

Lady: "Here to pick up your antelope?"

US: "Yep, the names are XXXX and XXXX"

The lady looked in the stack and looked a bit bewildered, then the "Ah, Ha" look.

Lady: "Oh, I remember. You guys are the ones with the clean animals. We put your boxes over here on the top shelf by themselves. Those are the cleanest, most beautifully trimmed carcasses we have ever had come through our shop. The butcher set yours aside so that they were the very first ones processed after he had cleaned all the saws and butchering equipment. He said if you cared about your animal that much, he would show the same respect. You guys are really going to enjoy antelope."

She turned and pointed to the other boxes of meat and said

Lady: "These guys aren't going to like it much."

She was right, antelope is really good, as long as it has been properly handled and processed.

And that is how I learned my lesson that day.
