By that logic, do you turn off the refrigerator when you go to sleep and then turn it back on when you wake up??? Some things are meant to be left on 24/7.

That's not true, charging it to full capacity is fine for it. Running it down to almost no capacity is what shortens the life. The more a battery is charged, the higher the voltage, and the lower amount of amps a process or task takes. When the battery is near dead, the voltage is much lower, causing the same process or task to use a lot more amps or watts and to create a lot more heat in the cells shortening it's life span by creating sulfate on the plates.

In addition to the other very practical reasons for leaving your smartphone on at night, what about this, home defense experts? Why would you want to wake in the middle of the night with noises in the house, landline cut, and try to call 911 with a phone turned off or discharged? Shees. _________________________ “Remember, remember the fifth of November!"

The guy that works at a local cell phone repair place told me that you should shut your cell phone off once or twice a month to let it "rest".

It would be more accurate to say that turning it off once or twice a month forces a hard reset, cleaning up any memory leaks or other detritus from poorly written apps. It is much like rebooting a windows computer periodically (or an Apple device lately).
