Well, a king is not a “highness” he is a “majesty.” Harry or William are “Your Royal Highness” and Charles is “Your Majesty.” British protocol ranges from stuffy to just polite. As an American, you could address them as someone in a position of authority that you respect and not raise an eyebrow.
