I can consciously ripple my pecs, like Bolo Leung in Bloodsport, though my actual pecs are minimal (not something I tried to do, I found I could do it by accident).
I can almost perfectly predict what other cars on the road will do, even (especially) weird stupid shit after observing them for a little bit. Amazes my wife.

At age 71, draw and fire 3 shots from my P220 SAO .45 in under one second. I have slowed down considerably since my 30's. With the cost of ammo I have not been practicing much lately.

I can set up a total station and use it just about anywhere on the side of a mountain.
Haven't in years since the guy I worked for retired before all the new super accurate GPS based survey equipment was available.

It's always came in handy when troubleshooting complex systems I've never seen before. Since I've been an electrician for many years and now more recently oversee mechanical, building monitoring, fire alarm,electrical, and other systems at work my ability to quickly understand how something works helps me a lot.
Along the same lines I'm really good at deductive reasoning, process of elimination, and logic. This also helps with troubleshooting new problems I've never seen.
It's a gift, guys like that are are valuable.

Not so much what most can't but what more and more are unwilling to do. Farm. There is little to be made running a small cattle farm, but I keep on keeping on because I enjoy it. Seeing the little calves running and playing somehow makes it worthwhile.

I can block an adrenaline rush. It's difficult to explain.
When you get that jump-scared rush of adrenaline that feels like it comes out of your chest and spreads to your limbs, you get shaky/sweaty and your heart starts pounding, right? When that starts to happen, I can stop it from spreading beyond my chest. I change my breathing and have to concentrate, but I can prevent it from spreading to my limbs and getting all shaky. It also prevents the pounding heart rate, too.

In my younger days, I spent quite a lot of time trying to see how fast I could hit a 18x24 silo at 10 yards from surrender (hands above shoulders) with a Wilson Accu-Comp LE .45 with a 2 lb. trigger. I could get it down to around .65. There were days when I just didn't feel like I was hitting on all cylinders and would cut things short. A 2 lb. trigger on a 1911 can be very unforgiving.
A couple of years back (60 years old), I could still manage some .6 draws on a 18x24 silo a few yards away starting with my hands at my side with a Gen4 Glock 19. I even managed one .57. Not too bad I guess for a 60 year old man.

I can tell when people are or aren't telling the truth, to the degree that I get paid well for it.
I can get people to tell me the truth, even if it's embarrassing and/or against their self interest to do so.
I know how to demonstrate that obtained statements are credible or shouldn't be viewed as credible to the degree that courts appoint me to use these skills and compensate me for my time and effort.

It's rare for me, but sometimes I'll wake up from a dream and swear that I lived a few years in that alternate reality. I mean it truly feels like I saw what life is like for my alternate in another universe. Then I start thinking about simulation theory, and stay up for the rest of the night/morning.

My most recent was an island full of bad guys turned alien space ship turned time machine that I sunk to the bottom of the ocean.
Was able to design a propulsion system using thermal expansion and the venturi effect. The 31 aliens were freeze dried in space.
One of them was liquefied when I pulled the core out of its chest cavity. Yeah, it was one of those dreams.
