Any backpacking stove or the single burner stoves you see for omelet making at brunch will work just fine.

I'll chime in with another vote for the propane camp stove. If you want something more stable than one of the little backpacking units, they make larger units for car camping that are basically a portable range. We have one of these, and it works ok...a little hard to regulate the output, but I've cooked hundreds of meals on it, and wouldn't hesitate to use it inside if I needed to.

Concerns about CO from using one of these or any kind of gas appliance inside are way overblown. We have a gas stove (which can be lit just fine when the power is out...the automatic igniter doesn't work, but you can just use a lighter) in our kitchen that doesn't vent outside, and have been using it for years with no problems. We set off the CO detector one time in 20 years...my wife was canning with all the windows shut and had all four burners running full blast for hours. This scenario went way beyond normal use, and even that was easily solved (albeit a bit chilly) by opening some windows.

Our stove is gas so, no power, we just light it with a match since the ignighter is electric.

We had 7 days of no power in Febraury 2021.

We still cooked, made coffee for neighbors with my Chemex pour-over…

Gas water heater so still had hot showers.

We also have a propane grill on the back porch, a Kamado Joe, and a fire pit with grill any a large supply of wood.

We were off work for a week and enjoyed it. Many left the neighborhood after the 2nd day.
