Men fight for liberty and win it with hard knocks. Their children, brought up easy, let it slip away again, poor fools. And their grandchildren are once more slaves.

A few artists not mentioned (check them out for ones you like, my likes may not work)..
Jim Croce Lobo Janis Ian
And a nod to a legend who passed in '69; Louis Armstrong (not rock, but his late work was sort of Adult Contemporary-like).

Angus, I emailed a list of 900 songs from the 70's and 80's for your consideration. I thought it was too long to post.
You and the Mrs. may have to take a longer trip.

I know it's not 70's but I would have to include the full albums of Sgt. Pepper's in that lineup, . For 1970's, Derek and the Dominos, Layla.
Individual songs, Rod Stewart, "You Wear It Well". A little Memphis sound circa 1960's, Carla Thomas "Baby".

I can recommend three albums that are under-appreciated from the 70s, all from Fleetwood Mac, and all prior to the Buckingham/Nicks years.
Kiln House: Jeremy Spencer and Danny Kirwin guitars and primary vocals. Christine McVie is an uncredited member of the band.
Future Games and Bare Trees: The Bob Welch/Danny Kirwin period. Christine McVie a full member of the band.
I think all three albums meet your criteria for soft-rock and contain some outstanding music.

Songs from The Beatles and Badfinger should be on your playlist.
