The Culinary Journey of Jonathan Harker
I found this interesting, especially the digression into knackers and London's "cat's meat".

Chicken Paprikash is a staple in my wife's family. Her dad comes from Hungarian stock and grew up eating it. It's wonderful, especially with some spicy peppers and sour cream. The version that we make is more of a soup than what was shown in the video, but the ingredients are the same.

The noodles (spatzle) are the key to a great paprikash.

Love chicken paprikash. My grandmother came from eastern Hungary and she made an amazing paprikash. I've only tried making it once and it turned out just OK. I'll have to try this recipe.

I watched half of the video yesterday. Will finish it later today.

My parents emigrated from Hungary to the US in 1959. I am first-generation American.
Growing up, paprikas csirke was a regular meal on our table.
I haven't had it in probably 30 years.
Will need to try a recipe and see if it comes out as good as I remember it.

Well now I have to make it! But not enough onions, needs about 2-3 times that amount and cooked way down.

Gotta use the good Hungarian paprika like this stuff and not crappy American grocery store paprika:

Interesting that the dumpling he made are the exact same thing as German Spätzle

My friend went to Hungary.
I explained, when you travel, bring back gifts. Stuff any extra space in your suitcase w/ Pap-Rick-uh.
He didn't realize until visiting the markets, the variety.
I also explained that many BBQ dry rubs have a base or good dose of paprika.
Never enough paprika. Smoked, sweet, hot,...

^^^^^^^. I grew several paprika plants this past summer and got a butt-load of peppers from them. Freeze dried them all and smoked some. Amazing flavor.
