On a Sig 320 can the slide be changed out if the pistol has a thumb safety or does a special slide have to be used? it looks to me that the safety blocks the trigger in the frame so changing the slide would not be a problem. But I am not sure about this.

That is correct. You can use any slide you want with a manual safety P320.
