Looking to secure a 1911 when I am not in the car and not carrying. Something metal, that is no thicker than necessary to hold the 1911 and 2 spare magazines. Suggestions?

You might try one of these:

Hornady used to make a variant with all the features of the RFID safe but without the RFID (key only) which was nice but they seem to have dropped that from their lineup.

I like the Tuffy as suggested by CPD SIG, but if you are looking for something more economical check out the Amazon basic safe. Your product decision really depends at on price and how secure you want this safe to be.

This is what we have at the house for guests and I keep in a drawer next to the bed... GUNVAULT MICROVAULT
It will sotre a full sized 1911 and several mags...

comes with a cable to tether to a car seat frame if you wanted to put it under a seat in the car, or inside a console...

but honestly, someone could pry it open with a large screwdriver or carry it away and open it elsewhere...these things are for the unprepared thief...

I won a SnapSafe in a karma here earlier this year.
I think mine is the Large size, and fits a P320 Compact & spare mag just fine. The XL might fit a 1911 a bit better depending on size.

I use a Liberty HD-50 in one of my cars. Basic, no frills box; should be large enough for a 1911. Available pretty much anywhere. However it was a bitch to find something to loop the damn cable to; I guess Porsche doesn't think anyone would store a gun vault in a 911.

The HD-90 is a larger version of the same thing, just in case you need a bit extra in capacity.

I have four GunVault safes. Three are in my house and one tethered to the frame of the car in my trunk. It's not this exact model, but you get the idea...

NanoVault 300

I have a few of the gunvault nanovaults and I tether one in my truck. I'd like to get one of those tuffy locking storage things whenever they make one for the new Rams. For stowing a pistol the nanovaults (and i assume the hornady is very similar) are great for going somewhere you cant bring a gun to prevent a snatch and grab. stow it out of sight and preferably not under the seat (sadly not a ton of hiding in a car or truck) and its should help when some POS breaks your window provided you use the cable.

Added side benefit, when we go to hotels or stay with family I bring it inside and lock my pistol in there to prevent tiny hands from getting at my gun. Its small enough to just pop in a backpack.

These are similar to the second (budget) model in the link above:
