It's been so long, that I couldn't remember what the initials CPO stood for. The only certified pre owned anything that I saw recently was during a visit to the Sig Experience in New Hampshire in July of '23. These were just used P226 and P320 magazines. No refurbed guns.
I worked in a gun range in downtown Dallas 20 years ago, and I want to say we had a few CPO guns that had been refurbed by Sig, probably P226's and P229's.
I wish this could be more helpful, but your assessment of going the way of the Dodo is very likely accurate.

Once I discovered the CPO program I became a huge fan.
I have quite a few CPO's and if I knew they were going the way of the DODO I would have scooped up a P226 and a P226 with the E2 grip chambered in 40.
I get emails from one company that regularly has CPO Sigs but they are usually the 320 series or 365. (I am not sure if we are allowed to post a link but I can provide it)
I did see a 2022 that made me curious.

Two possible answers... SIG realized people buying the used guns instead of new guns made them less money and decided it wasn't a great idea.(and/or decided the effort in doing it wasn't worth it)
Or like surplus military rifles, eventually the supply of large batches runs out, or at least dries up to the point of not being marketable and worth the trouble.
My US$0.02. Buy a beatup P226 or P229 from GunBroker and then buy a stripped frame from Matrix Precision along with a spring kit. Then transfer the parts from the old frame to the new and install the new springs.
In my opinion you end up with a pistol better than Sig's CPO's.

I picked up a P229 in .40 with .357 Sig spare barrel about 6 yrs. ago. It's in rotation as a truck gun and I shoot it once a month. Got plenty of .40 and .357 ammo for it and it's dead on @ 25 yds.
I think the supply of used P226X guns is waning, especially since most of the ones that got the factory CPO treatment were likely agency trade-ins, and there aren't many left in agency circulation these days. There are still police trade P226s and P229s on GunBroker, but most of them are in .40 or .357 Sig and the poor sales of guns chambered in those calibers probably makes them not worth the effort for the factory to refurbish.
I do remember seeing a bunch of P320 CPOs back around 2018-2019...IIRC they were priced right around $375. My guess is that they were also agency trades, likely pre-upgrade guns that got sent back to the factory and replaced with new ones, then Sig upgraded and re-sold the returns as CPOs. Those have dried up too, though, as I can't imagine there are too many pre-upgrade guns floating around out there anymore, especially in agency use.

CPO’s are dependent on Agency trade ins. Like most surplus the supply ebbs and flows.
Most agency trade ins occur due to changes in technology. The past 10 or 15 years has seen law-enforcement transition from metal frame double action and double action only guns such as the P226 and P229 to polymer striker fired guns and now two optics equipped guns.
There aren’t many departments left with traditional metal frame guns to trade in and with all the negative attention on the P320, many departments that are not trading their old guns to SIG because they’re going to different platforms such as the Glock or the M&P.

I purchased a P228 at the Sig store in Epping a few weeks ago and it came in the red box even though it had never left the factory according to the employee who waited on me. He said he thought it had been a display model which had been fired at their factory range. It appears brand new externally and came with two 13 round mags, one still wrapped. A reasonable deal for $549 considering how much they are going for on the auction sites.

Yeah, once it's been used (fired), even if just inside the factory and never left it, it can no longer be sold as new. Hence, CPO. Yeah $549 is a steal for that CPO P228.

I've noticed Recoil Gunworks continues to list guns as CPO. Not sure about origin, or whether they come in a red box, etc. Recently they've been of the polymer frame variety (they have 2 models available as of today).
The last aluminum frame CPO I bought was a .40 P229 from CDNN, but that was, golly, 7 years ago..?
