Worksharp Sharpener Question
3-4 years ago I realized that I needed to maintain a nice set of kitchen knives which we got the year before. I did all the 'research' on the web. Other than the TSProf, none of the systems/devices really stood out. Most of them appeared to be too fussy or a PITA to set up.. So I bought a set of water stones and learned how to use them. The stones give me OK/pretty good results, but I am inconsistent in holding the correct angle, so I am sure this adds quite a bit of time to my efforts. Additionally, the stones become shaped by use and need to be flattened. I'm not sure I want or need to work so hard to achieve a good usable edge.

Now I see that Worksharp offers its Professional Precision Adjust Knife Sharpener, which appears to address most of the weaknesses of the non-professional Precision Adjust sharpener. Has anyone used this system, or have an informed opinion one way or another?

I don't have one, but I've seen several videos of folks using one. They seem to be loosely based on the TSProf system, and in that regard, I think it'd work fairly well. But, with only one central clamp, you are limited to using it with small blades and it will not work well with longer kitchen knives as the blades will flex and give you an uneven angle. Same problem I ran into with my Wicked Edge and longer knives.

If you have your heart set on one, buy it off of Amazon and try it out for 30 days. If you don't care for it, send it back. Or, give yourself an early Christmas present and splurge for a TSProf Kadet. The latter would be my choice.

I have one and use it occasionally. There is a bit of setup but nothing major. I would say it's best for small and medium knives, I don't really use it on anything over a 4" paring knife or pocket knife. If you are sharpening 8 or 10" chef's knives all day, it will seem a bit small and tedious. Bigger and better than a Lansky sharpening system though.

I have the ken onion worksharp and tspro. I'm happy with both, the worksharp for convex edges and the tspro for everything else.

However, I get lazy, and wait until multiple knives get dull before touching them up again on the tspro. It takes 20 minutes to set up, then the angles have to be precise, my technique perfect, it becomes more about the act of sharpening then the actual edge.

In an intrest of finding something easier that doesn't have to have a mirror polish I tried one of those roller sharpeners on amazon. Hate to say this, but for working kitchen knives it is an absolute winner. I can get an edge sharper than needed for handling kitchen task in minutes.

I love spending time polishing and reading phone book print on the edge of my knives but its not practical or even useful, its just a hobby. This roller sharpener is nice for instant daily maintenance as a real tool.

I use the worksharp on my german knives and steaknives. Quick and decent sharpness. I don't care about the knives. The worksharp removes considerable amounts of material.

For knives I care about, I use (japanese) stones. The knives I care about are japanese single edged knives (deba primarily). It only takes about 10-15 swipes on the stone (plus a few swipes on the flat backside) and the knive is sharp. I do this twice a month (once is actually enough but I like a razor edge).

It took a little practice at the beginning. And I make sure to use the whole width and length of the stone. I'll rotate the stone lengthwise after each use. I'll have one end of the stone closer to me one time, then other end of the stone closer to me the next time.

Confused

I keep mine put together, so it takes about 3 seconds to slap a plate on there and another maybe 10 seconds to set the angle and start sharpening, which takes less than 10 minutes per knife. I haven't found a lot of technique issues. It's pretty straightforward.

Even if I didn't keep it together, there's three parts to it. I can put it together in less than a minute.

I have the Ken Onion Worksharp and I don't find that it removes too much material if you use the right belts. The Extra-Fine 6000 grit and Ultra-Fine 12000 grit polish the blade, without removing visible material.

On the other hand, the more coarse belts will reprofile a knife either intentionally or unintentionally...

Thanks for all your thoughts and comments. I'm getting the sense that I just need to bite the bullet and go with a TSProf if I am to move away from the water stones.

Mine is more than 3 peices. It has to be dissassembled to be put in the suitcase. Not sure which one you have.
